Beef Chili


Give up on the chili packet from the store and mix your own! I won’t get into the debate on beans in chili. This is a standard winter favorite in our house!

Ingredients

  • 2 tablespoons peanut oil

  • 1 pound stew meat (or, chorizo)

  • 2 pounds ground beef

  • 1 tablespoon onion powder

  • 1 tablespoon garlic powder

  • 5 tablespoons chili powder

  • 1 tablespoon ground cumin

  • 1 tablespoon smoked paprika

  • 1/4 teaspoons dried oregano

  • 1/2 teaspoons salt

  • 8 ounces beef broth

  • 8 ounces tomato sauce

  • 1 red onion minced

  • 1 bell pepper minced

  • 2 cans dark red kidney beans

  • tortilla chips or rice for serving

Instructions

  1. Brown stew meat in peanut oil in a small pan, and place in the pressure cooker. Put ground beef directly into pressure cooker. Mix Well
  2. In the pan used to brown the meat, sweat the onions and peppers and add to pressure cooker
  3. Deglaze pan with beef stock and add to pressure cooker
  4. Add spices. Mix Well
  5. Set Pressure Cooker to 30 minutes and cook allowing pressure to release naturally
  6. Add drained kidney beans to pressure cooker and allow to cook uncovered for 5 minutes.
  7. Serve over rice or tortilla chips
