Beef Goulash (Hungarian Style)


Good old comfort food! Tender chunks of beef in a mouth watering gravy

Ingredients

  • 2 ½ pounds boneless beef chuck roast

  • 2 tablespoons olive oil

  • 2 onions, chopped

  • 1/2 teaspoons teaspoon salt

  • 1 teaspoon freshly ground black pepper

  • 2 tablespoons Hungarian paprika

  • 2 teaspoons caraway seeds

  • 1 teaspoon dried marjoram

  • 1/2 teaspoons ground thyme

  • 1 cup chicken broth

  • 1/2 cups dry red wine (Pinot noir is great)

  • 3 tablespoons tomato paste

  • 2 bay leaves

  • 1 package mushrooms, sliced

  • 1/2 package egg noodles

Instructions

  1. Sear beef in batches, add to pressure cooker
  2. Brown onions in same pan, add to pressure cooker
  3. Brown mushrooms in same pan, add to pressure cooker
  4. Heat spices and add to pressure cooker
  5. Deglaze pan with stock and pour into pressure cooker
  6. Add tomato paste and wine
  7. Mix and set timer to 30 minutes
  8. Prepare Egg Noodles according to package and serve
