Cinnamon Rolls


This is the recipe that got me into cooking! A guilty pleasure for sure! I haven’t made a single batch of these in years, so just do yourself a favor, and double up the recipe. Your friends, family, and co-workers won’t complain!

Ingredients

  • Dough

  • 1 cup milk

  • 1 package dry yeast (1/4 ounce)

  • 1/3 cups butter, Softened

  • 1/2 cups granulated sugar

  • 1 teaspoon salt

  • 2 eggs

  • 4 cups flour

  • Filling

  • 1 cup packed brown sugar

  • 2 1/2 tablespoons cinnamon

  • 1/3 cups butter, melted

  • Icing

  • 8 tablespoons margarine

  • 1 1/2 cups powdered sugar

  • 1/2 teaspoons vanilla

  • 2 ounces cream cheese

  • 1/8 teaspoons salt

Instructions

  1. Dissolve the yeast in warm milk in a large bowl. (I use a stand mixer for best results)
  2. Add sugar, butter, salt, eggs, and flour, mix until dough comes together
  3. Place dough in a bowl, cover, and let rise in a warm place about 1 hour or until the dough has doubled in size. I usually preheat the oven to it's lowest setting and turn it off right before I combine all of the ingredients.
  4. Preheat oven to 400 degrees.
  5. Roll the dough out on a lightly floured surface, until it's 20 inches long by 16 inches tall.
  6. Filling: Combine the brown sugar and cinnamon in a bowl
  7. Paint top side of dough with melted butter and cover fully
  8. Combine the brown sugar and cinnamon in a bowl
  9. Sprinkle the brown sugar and cinnamon mixture evenly over the dough
  10. For full sized rolls: From the long edge, roll the dough up into a log. Cut the dough into 1 3/4" inch slices. For mini rolls: Cut dough in 1 index finger wide strips longways then cut the dough in half from the top. Roll each strip.
  11. Place in a lightly greased baking pan.
  12. Bake for 10 minutes or until light golden brown.
  13. While the rolls are baking combine the icing ingredients
  14. Mix with an electric mixer until fluffy.
  15. When rolls are done, spread the icing over the hot rolls, and serve.
