Conch Ceviche


From a family vacation in Mexico. Crunchy, light and refreshing!

Ingredients

  • 1 pound conch meat (from 3 large or 4 medium conch)

  • 1/4 cups orange juice

  • Juice of one lime

  • 1 small red onion

  • ½ red or green bell pepper

  • 1 small tomato

  • ½ minced jalapeno (seeds and stem removed)

  • ½ teaspoons sea salt

Instructions

  1. Cut conch, and all vegetables into small uniform pieces and add to a bowl
  2. Add orange and lime juice and mix.
  3. Add salt to taste
