Mushroom Toban Yaki


An excellent dish for mushroom lovers! I had this at a restaurant in Las Vegas and had to learn how to make it once I returned home!

Ingredients

  • 3 tablespoons of Extra Virgin Olive Oil

  • 4 ounces assorted mushrooms, chopped (Shitake, Shimeji, Maitake, Royal Trumpet )

  • 2 cloves garlic

  • 1 thumb sized piece of ginger

  • 1 tablespoon Soy Sauce

  • 2 tablespoons Sake

  • 1 tablespoon Yuzu (Japanese Citrus Fruit) Juice

  • 1 egg, poached

  • chives for garnish

Instructions

  1. Cook the 4 oz assorted mushrooms in the olive oil to release the liquid
  2. Add garlic and ginger, continue to saute until garlic starts to brown
  3. Add sake and cook off the alcohol.
  4. Add Yuzu Juice and Soy Sauce
  5. Top with a poached egg and chives
