Schweine Schnitzel


Fried pork chops, German Style! Top with Mushroom or Goulash Gravy

Ingredients

  • 4 boneless pork steaks or chops

  • salt and freshly ground black pepper

  • 1 cup all-purpose flour

  • 1 teaspoon salt

  • 2 large eggs

  • 1 cup panko breadcrumbs

  • 1 lemon (zest)

  • Oil for frying

Instructions

  1. Place the pork chops between two sheets of plastic wrap and pound them until just 1/4 inch thick with the flat side of a meat tenderizer or heavy pan.
  2. Lightly season both sides with salt and freshly ground black pepper.
  3. Mix the flour and 1 teaspoon of salt.
  4. Place the flour mixture, egg, and breadcrumbs in 3 separate shallow bowls.
  5. Dip the pork in the flour, the egg, and the breadcrumbs, coating both sides and all edges.
  6. Heat ¼ inch of oil in a large cast-iron skillet over medium-high.
  7. Add one piece of schnitzel to the skillet and cook, turning once, until browned and crisp, about 6 minutes total
  8. Transfer briefly to a plate lined with paper towels.
  9. Repeat with the remaining schnitzel
  10. Serve immediately with grated lemon zest and your choice of sauce (Mushroom or Goulash Gravy).
